Perky Watermelon Salad


* 4-6 cups cubed and seeded watermelon
  (small cubes if you have time large fine)
* 2 cups of baby spinach leaves
* 1/2 cup diced red onion
* 4-6 tbspns rice vinegar (or substitute)
* 2-4 tbspns finely chopped fresh mint
* 1 teaspoon pepper

Combine all ingredients and serve immediately. Super simple, low fat, vegan and no gluten if you use the rice vinegar.

You can make different versions of this perky salad by substituting honeydew or rockmelon and basil or other fresh herbs for the mint. You may substitute any lettuce for baby spinach. Just rip into small pieces. You may also mix two or three types of melon for a more colourful dish.
